Delicious chocolate vegan muffins: You must try them!

When people are committing to become vegans, usually they believe that they need to say goodbye to the sweets in their diet.

Great news for all of you who chose this way of life – if you are one of those people who can’t say no to chocolate you can stay calm and try this recipe. It is very simple to make and it will not take much of your time to prepare it.

A great idea is to make this if you are invited to a party, so you don’t show up empty-handed. I am sure everyone would like that. The total estimated time to prepare this Chocolate Chunk muffins is no more than 30 minutes.

This is what you need:

  • 150g all-purpose flour
  • 80g white sugar
  • 5g baking powder
  • 2g baking soda
  • a pinch of salt
  • 1 tablespoon melted Coconut oil
  • 160g almond milk
  • half a teaspoon Coconut vinegar
  • half a teaspoon vanilla extract
  • 75g vegan chocolate chunks

Preparation:

First what you need to do is to pre-heat the oven to 360°F/180°C.  Put all the dry ingredients, except the chocolate chunks, in a mixing bowl, whisk them, then add the wet ingredients and whisk them all together, until it’s a smooth batter. Then, fold in the chocolate chunks and put the batter in muffin wrappers. If you don’t have wrappers, use a lightly oiled muffin pan and put them in the oven. Bake them for 20 minutes, and use the Toothpick method to make sure the muffins are done in the middle.

When you are sure they are ready, take them out of the oven, let them cool a bit and enjoy!
